Recipe for Tabouli also known as Tabbouleh

An Easy Recipe

Tabbouleh (Arabic) is also known as tabouleh or tabouli. It is a Levantine Arab dish, often used as part of a mezze.

 Its primary ingredients are:

bulgur, finely chopped parsley, mint, tomato, scallion, and other herbs with lemon juice, olive oil and various seasonings, generally including black pepper and sometimes cinnamon and allspice.

"All these ingredients are easily available  and most can be grown in pots or a small garden!

Ingredients
350g/12oz bulgur wheat
(similar to cous cous - use either)
4 x tomatoes quartered
1/2 cucumber, diced
1/2 bunch spring onions, chopped
15g/1/2oz fresh mint, chopped
15g/1/2z fresh parsley, chopped
For the dressing:
1 lemon, grated rind and juice
3 tbsp olive oil
salt and black pepper

I. Place bulgur wheat in a bowl and cover with 450ml/3/4pt boiling water.

2. Soak for 15min until water is absorbed. Stir in vegetables and herbs.

3. Mix dressing ingredients thoroughly and pour over wheat. Stir well.

It tastes better if you leave it for a day to allow the flavours to permeate.
